The crock pot strikes again
Mmmmmmmmmm. This one was SO good!! I was totally leary about trying it - but it was totally worth it!

The recipe calls for a beef roast but I used a pork shoulder roast (jsut what I had in the fridge LOL). Mmmmm. Even Aaron loved it which says a LOT HAHAHA.

Slow Cooker Cranberry Roast

PREP TIME 15 Min COOK TIME 8 Hrs READY IN 8 Hrs 15 Min

INGREDIENTS

  • 1 (1 ounce) envelope dry onion soup mix
  • 1 (3 pound) beef chuck roast (or pork roast)
  • 1 (16 ounce) can jellied cranberry sauce
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour

DIRECTIONS

  1. Place onion soup mix in the bottom of a slow cooker. Place roast in the slow cooker, and top with cranberry sauce.
  2. Cover, and cook 8 hours on Low.
  3. Remove roast, and set aside. Set slow cooker to High. Whisk together butter and flour, and slowly mix into the liquid remaining in the slow cooker to create a thick gravy. Serve with the roast. ***I strained the onions out of the gravy :)
I served it with mashed potatoes and other typical side stuff - it was super yummy.

I just discovered slow-cooking...
Yeah, I know, better late than never, right? I got a crockpot when we got married but it was TERRIBLE and burned everything I ever made. The last meal got thrown in the trash IN the crockpot. LOL.

I bought a new one last month and can I tell you - now I know what I've been missing!!!

I got this one - it's AWESOME (although I got a better deal than they're offering now HAHAHA!
I've made probably 4 or 5 meals in it so far and each one has been great! A few days ago I made french dip sandwiches. Seriously - the best french dips I've EVER HAD.

Here's the recipe if you want to try it out!!

Easy Slow Cooker French Dip

INGREDIENTS

  • 4 pounds rump roast
  • 1 (10.5 ounce) can beef broth
  • 1 (10.5 ounce) can condensed French onion soup (they were out of this at the store so I just used a packet of onion soup mix and water and it was great)
  • 1 (12 fluid ounce) can or bottle beer (I used Guinness - Aaron's beer of choice)
  • 6 French rolls (I found little mini-french rolls that were perfect sized for the kids)
  • 2 tablespoons butter

DIRECTIONS

  1. Trim excess fat from the rump roast, and place in a slow cooker. Add the beef broth, onion soup and beer. Cook on Low setting for 7 hours.
  2. Preheat oven to 350 degrees F (175 degrees C).
  3. Split French rolls, and spread with butter. Bake 10 minutes, or until heated through.
  4. Slice the meat on the diagonal, and place on the rolls. Serve the sauce for dipping.
The kids put ketchup & mustard on their sandwiches and said they were like hamburgers. Eli is a VERY picky eater so the fact that he said this meal came "right after hamburgers and pizza" on his list of favorite meals is a biggie! LOL. This does make a LOT of meat - I had this for lunch for DAYS. LOL.
